Sweet Potato Kale Soup With Coconut Milk

You just know you’re in for a real health kick when you treat your body to a mean green smoothie but what’d ya say to a mean green sweet potato kale soup (with coconut milk)?

Ingredients

  • 2 medium sweet potatoes peeled and chopped
  • 1/2 diced onion
  • 1 can coconut milk
  • 2 basil leaves
  • 4 large kale leaves
  • I cup boiling water
  • 2 tbsp apple cider vinegar
  • black pepper and sea salt to taste

Instructions

  1. Preheat oven to 400F
  2. Place your chopped sweet potato spread out on a baking sheet and drizzle with a little olive or coconut oil. Use your hands to mix it all up, you want all the potatoes covered so they cook evenly. Sprinkle some salt and pepper for flavour.
  3. Bake for 20 minutes until soft
  4. Once your potato is ready, place it along with all other ingredients in your blender and blend until smooth.
  5. Pour into a pot and heat on medium heat until fully heated through.
  6. Season with salt and pepper and top with whatever you fancy! We went for sliced avocado, chopped almonds and cilantro. Delish!
