This started out as a creamy sweet potato soup until I decided to add in a few handfuls of fiber rich kale and voila! Said soup was transformed into a gorgeous green bowl of utter deliciousness and I knew this recipe was a keeper!
Now we know it may come across as slightly intimidating. It is green after all and if you’re used to fast food and fries this one may have you running for the hills.
But please just give it a chance…
Once you slurp up a spoonful of this soup you’ll find it’s rich, creamy and so so good with the perfect balance of sweetness to take it to the next level (thank you sweet potatoes!)
Full of vitamins, minerals and antioxidants along with healthy fats from decadent coconut milk, this soup will fill you right up and really treat your insides to a hefty dose of TLC.
You do need a blender or hand held mixer for this one, but it’s one of the easiest soups to make! Scroll all the way to the bottom of this post for a few blenders we recommend.
Here’s how to do it!
- 2 medium sweet potatoes peeled and chopped
- 1/2 diced onion
- 1 can coconut milk
- 2 basil leaves
- 4 large kale leaves
- I cup boiling water
- 2 tbsp apple cider vinegar
- black pepper and sea salt to taste
Preheat oven to 400F
Place your chopped sweet potato spread out on a baking sheet and drizzle with a little olive or coconut oil. Use your hands to mix it all up, you want all the potatoes covered so they cook evenly. Sprinkle some salt and pepper for flavour.
Bake for 20 minutes until soft
Once your potato is ready, place it along with all other ingredients in your blender and blend until smooth.
Pour into a pot and heat on medium heat until fully heated through.
Season with salt and pepper and top with whatever you fancy! We went for sliced avocado, chopped almonds and cilantro. Delish!
