We love sandwiches.
There are so many ways to enjoy them, and we love getting creative with our fillings!
We love experimenting with ingredients you wouldn’t necessarily expect to see on a sandwich, like delicious ruby red beets! If you have never tried beets or you have but aren’t sure how you feel about them, then we dare you to try this roasted beet sandwich, we promise it might convert you.
On one side of our toasted bread you will find a creamy layer of organic mayo and homemade pesto, and on the other you will find scrambled eggs, beets, and loads of greens, including avocado and arugula.
Top it off with some fresh alfalfa sprouts, put it together and you will enjoy a merging of flavors that will make your taste buds sing!
Here’s how this roasted beet sandwich recipe comes together:
This beet sandwich is filled with ingredients you already love, but you can feel free to customize it even further.
It all starts with the toast. Who doesn’t love toast? Since we follow a gluten-free diet, we chose our favorite multi-grain loaf. You can use your favorite bread.
The filling of this sandwich is where it really starts to get good. One one side (see the image on top) you have the creamy scrambled eggs, topped with sliced beets that have been roasted to perfection.
Follow that with the peppery arugula which gives you something to bite into, avocado, and micro greens and you’re done the one side.
Next, you’ll be making a homemade pesto (very simple). You only need 3 ingredients for this: olive oil, fresh basil, and garlic. Traditionally you’ll also add pine nuts and Parmesan. But we like to keep it simple. Also, we don’t eat dairy so we had to leave the Parmesan out anyway! Don’t worry, you won’t be missing anything when you dig into this sandwich.
Finally, we spread a bit of mayo as well just to give this sandwich that extra creamy kick.

- 4 slices of gluten free or Ezekiel bread
- Dairy free margarine
- 2 handfuls arugula leaves
- 4 eggs, scrambled
- 1 avocado, sliced
- 4 thick slices cooked beet
- 2 handfuls fresh alfalfa sprouts
- 1 tablespoon homemade pesto
- 1 tablespoon organic, mayonnaise
- 4 cups fresh basil (for pesto)
- 3 tbsp olive oil (for pesto)
- 2 garlic cloves (for pesto)
- Start by scrambling your eggs and setting aside, then toast your bread and butter each slice and slather your pesto and mayo on one half
- On the other half of bread layer your scrambled eggs, beet slices, arugula and avocado, then top with the alfalfa sprouts
- Now for the fun part! Smash your slices together and dig right in!
